Posted @withregram • @thrivingonplants Grape Cheesecake Parfait ?? This no-bake dessert is sweet, fruity, creamy and sooo delicious ? Plus, it’s incredibly easy to make ? SAVE this recipe and try it out for yourself!!

Serves: 2 large or 4 small glasses
Prep: 15 minutes
Chill: 1-2 hours

Ingredients:

Biscuit layer
100g vegan digestive biscuits
2 tbsp melted vegan butter

Filling
2 tubs (250g) vegan cream cheese
½ cup canned coconut cream, chilled (solid white part only)
½ cup icing sugar
1 tbsp lemon juice
Zest of 1 lemon
1 tsp pure vanilla extract

Method:
1. Blend the biscuits until it becomes a fine crumb. Pour into a bowl and mix in the butter. Set aside.
2. In the meantime, add the vegan cream cheese, coconut cream and sugar into a large bowl and beat with a hand mixer until smooth. Add in the lemon juice, lemon zest and vanilla and beat again until well-combined.
3. To assemble, fill the base of your glass with the crushed biscuits. Top with the cheesecake filling followed by the French Grape Fruit Spread (be generous!). Repeat with the remaining ingredients and decorate with fresh grapes on top. Chill in the fridge for 1-2 hours before serving.

I don’t see grape being used very often in desserts so I’d highly recommend you giving this a go, it’s epic!! You can also make variations of this recipe by using the other @stdalfouraustralia fruit spread flavours (eg. Wild blueberry, strawberry or even royal fig). All of them taste incredible, are made from 100% fruit and are available in Coles, Woolies & IGA ?
