My last recipe for the Moroccan series was a dessert because is learning ever really complete without one of these?

I attempted hazelnut, pistachio briouates on a weekend morning. Pronounced a bit like ‘briwat,’ this dessert is somewhat similar to the more known baklava.

I’ve found I underestimate the time it takes to make certain things. Between de-shelling pistachios and blanching hazelnuts and melting butter or heating the honey and unravelling delicate filo pastry quick enough to not dry it out or rip it apart, there’s a whole bunch of finnicky stuff that I just didn’t account for. In that alone, this was a learning experience.

Perhaps the most memorable aspect of this dessert was that I got to try a new flavour in the form of orange blossom water.

This was an incredibly unique experience. I learnt to work with completely different ingredients, got to experience different flavours and textures and got to immerse myself completely in another cultural experience.
