I made these with two main intentions, one because yesterday was National coffee & mocha day & the second was I was suppose to have dinner with a friend and I was bringing the dessert (but then he cancelled ?) so now I just have all these brownies and no one to share with ? I’m sure I will find some volunteers because they came out too good not to share! ???⁣

Recipe: ☕️ ⁣
-1/4 cup coconut sugar ⁣
-1/4 cup cashew butter⁣
-1/4 cup brewed instant coffee⁣
-1 cup almond milk ⁣
-1/2 cup cacao powder⁣
-1 cup rice flour ⁣
-1 1/2 tsp baking powder ⁣
-1 tbsp vanilla extract⁣
-pinch of salt⁣
-2 replacement “eggs”⁣
-8 crushed Oreo cookies⁣

-50g dark chocolate⁣
-2 tbsp coconut oil ⁣
-2 tsp instant coffee of choice⁣
-2 tbsp cashew butter⁣
-1 tbsp vanilla extract ⁣
-6 crushed oreo cookies ⁣

Instructions: ⁣⁣
-Preheat the oven to 350°F/175C⁣⁣
-First, line an 8×8 baking pan with parchment paper. ⁣⁣
-In a large bowl, whisk together the cashew butter and coconut sugar, Then, whisk in the almond milk, replacement “eggs” brewed instant coffee and vanilla extract.⁣⁣
-In a separate bowl, combine the dry ingredients: rice flour, cacao powder, baking powder, and salt.⁣⁣
-Mix the dry ingredients into the bowl with the wet mixture until well combined.⁣⁣
-Fold in the crushed Oreos. ⁣
-Spread the batter evenly into the baking pan.⁣⁣
-Bake for 25-30 minutes, or until a fork comes out relatively clean. ⁣⁣
-Let cool for about 30 minutes in the pan. ⁣⁣
-While the brownies are baking make your frosting, melt your dark chocolate with coconut oil and then mix in your cashew butter, vanilla extract and instant coffee . ⁣
-Once the brownies are completely cooled add your frosting and top with more crushed Oreos. ⁣
-Cut into slices and enjoy!! ⁣⁣
-Store leftover brownies in an airtight container in the refrigerator.⁣
