⁣Made these chocolate chip blondies last night because I was having a dessert craving and OH MY GOSH 🤤🤤🤤 100% my favorite gooey blondies I’ve ever made! They’re gluten-free, dairy-free, low sugar and vegan!⠀

1 cup gluten-free flour⠀
1/2 tsp baking soda⠀
1/4 tsp seat salt⠀
1 flax egg⠀
1/4 cup + 2 Tbsp ghee or coconut oil⠀
1/4 cup granulated monk fruit⠀
1/4 cup + 2 Tbsp coconut sugar⠀
2 Tbsp maple syrup⠀
1 Tbsp vanilla extract⠀
1 1/2 cups chocolate chips of choice⠀

Directions:⠀
1. Preheat the oven to 350F and line an 8×8 baking dish with parchment paper.⠀
2. Make your flax egg in a small bowl by mixing 1 Tbsp of ground flaxseed with 3 Tbsp of water. Mix and set aside to thicken up. ⠀
3. In a medium bowl, mix together flour, baking soda and salt. In a large bowl, cream together ghee or coconut oil with the monk fruit and coconut sugar using a hand mixer. You can use all monk fruit or all coconut sugar for the sweeteners if that’s all you have and it will work just fine! Add the flax egg, maple syrup and vanilla. Add dry ingredients to the wet mixture and stir together with a spoon until combined. ⠀
4. Mix in most of the chocolate chips but save some of them to put on top.⠀
5. Pour the batter (it will be thick) into the pan and spread it until even. Add the remaining chocolate chips on top. ⠀
6. Place in the oven and bake for about 15-18 minutes until the edges start to turn golden brown. ⠀
7. Remove from oven, let cool slightly and serve warm or cold. Enjoy!
