Lemon Vanilla Blueberry KindCheesecake

I wish you could taste this decadent, creamy and dreamy dessert. It is bursting with fresh blueberry flavor. The vanilla bean gives off a heady aroma.

I love making raw desserts. Between the limited ingredients, endless variety, incredible taste and ease of clean up, what’s not to love!

Crust

1 cup Cashew
½ cup Pitted Dates
½ tsp ground Vanilla bean

Vanilla Filling

1 ½ cups Raw Cashews
1 Lemon, zested & juiced
¾ cup Pitted Dates
1 tsp ground vanilla bean

Blueberry Filling

1 ½ cups Blueberries
1 ½ cups Raw Cashews
1 Lemon, zested & juiced
1 cup Pitted Dates

Glaze

½ Cup Pitted Dates
¾ Cup Blueberries

Pulse crust ingredients in processor. Press into molds or pan

Blend filling ingredients until smooth. Pour into crusts. Freeze until set. Thaw for 10-30 minutes or until fork tender before serving.

Blend glaze, spoon onto serving plates . Top with zest, crushed cashews and flowers.
