I know black bean brownies have been around forever but what about BLACK BEAN BROWNIE COOKIES?! ? To make it even better, how about have them as Nicecream Sandwich rolled in Cacao Brown Rice Crisps?! You get fudgy, creamy, and crunch within one bite!

These cookies only require 5 ingredients! The entire icecream sandwich is vegan, GF, non-GMO and refined sugar free, plus everything in this recipe was ORGANIC! Full recipe is at the end but first I want to talk a little about why I always choose organic produce whenever availability permits. The reasons are simple, organic farming is better and safer for 1. Yourself; and 2. Our planet. Lots of harmful chemicals such as fungicides, herbicides and insecticides are used in conventional farming and the residues remain in the food we eat. Those chemicals are linked to serious diseases from respiratory problems to cancer, and can even cause birth defects. On top of that, the agricultural chemicals are poisoning the soil, water, and even the birds and other animals who live near farms!

Black Bean Brownie Cookie ?:
1 15oz can black beans;
6 tbsp unsweetened cacao powder;
2 tbsp olive oil;
3 tbsp ground organic oats, I used @onedegreeorganics
4 tbsp brown sugar;
1 tbsp soy milk;
1/2 teaspoon baking powder;
2 tbsp maple syrup;

– Preheat oven to 350F;
– Add all ingredients into a food processor, process till smooth;
– Line a cookie sheet with parchment paper, use 1 spoon of dough per cookie, form into a ball then press into the size you prefer;
– Bake for 20-22 minutes;
– Cool completely.

Nicecream Sandwich:
– Blend 1 1/2 frozen bananas and 2 tbsp soy milk till smooth;
– Fill two cookies with banana nicecream then roll in @onedegreeorganics cacao rice crisps (optional)
– Freeze for 2 hrs
