I feel like there is something so summery about citrus flavored desserts. And muffins are great any time of year! These gluten free lemon poppy seed muffins are SUPER fluffy and light (check out the third photo for some seriously crazy air bubble action). The crunch of the poppy seeds compliments perfectly with the soft texture. I veganized the recipe from @twopeasandpod. Yum!

Ingredients:
2 cups gluten free all purpose flour (I used @kingarthurflour)
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tbs poppy seeds
3/4 cup plant based milk + 1 tsp apple cider vinegar
2/3 cup sugar
Juice and zest of 2 lemons
1 tsp vanilla extract
1/2 cup coconut oil, melted

Heat oven to 400. Combine plant based milk (I used almond) with ACV to make buttermilk. Set aside. Line a muffin tin with liners. Use a whisk to combine dry ingredients (flour, salt, baking powder, baking soda, and poppy seeds). Combine your vegan buttermilk, lemon juice and zest, vanilla, sugar, and coconut oil in a separate bowl. Add your wet to your dry ingredients and stir until just combined. Transfer to muffin tin. Bake for 15-18 minutes, or until a toothpick inserted will come out clean. I hope you try these!
