I am quite impressed with the result of this dish. Although the tofu is taking the spotlight on the picture, the real star is the broth. I wasn’t planning on achieving any particular flavor, but ended up creating a creamy broth that is totally vegan and tasted way too much like ramen broth. It was rich, creamy, bold, and fatty – just like ramen 😆😆
Ingredients:
1 red onion
1 garlic head minced
1 tablespoon of tamari sauce
1 dessert spoon mild Indian curry paste
2 tablespoon of tahini
1 dessert spoon of tomato paste
1/2 liter of hot water
1/2 lime juice squeezed
1 teaspoon sesame oil
Cayenne pepper to taste (optional)
Instructions:
Saute onion and garlic with the curry paste, tamari sauce, and a splash of water . Let it it cook until the water dries up and the onions start to caramelize. Add the tomato paste and one cup of water. Let it cook for about 5 minutes. Then add the tahini and stir well until the tahini is fully dissolved and blended well. Remove from heat, add the sesame oil and the lime juice. Right before serving, add the remaining water adjust the creaminess to your taste.
