Easy ‘cheesecake’ bowl! ?

I actually intended to try and make a tofu yoghurt bowl but she turned out thicc and cheesecakey so we’ll just roll with it. ? I love how versatile tofu is and the fact that I can make desserts with it! This was super easy and the actual cheesecake base contained 6 ingredients.

For 3 portions you need ??
600g firm tofu with the liquid squeezed out (no need to press for ages)
1 scoop vanilla protein powder
1-2 tsp apple cider vinegar
2 tsp vanilla extract
2-5 tbsp maple syrup or sweetener of choice (do this to taste but remember more syrup = looser consistency)
Non-dairy milk to loosen if needed

Simply add all the ingredients to a food processor and blend! Use more or less milk depending on your desired consistency. Silken or soften tofu would be more of a liquidy yoghurt texture, firm can become more of a Greek yoghurt or in this case cheesecake. ?

This is a simpler variation of a tofu cheesecake recipe I also make which has a more traditional cream cheese taste with nooch, lemon, more vinegar, miso paste etc. to give it a more dynamic flavour but this needs fewer ingredients and is just as yummy as a healthy breakfast or dessert when topped with fruit, nuts etc.
