When the weather gets rainy β˜”οΈ it’s time to get rolling…
Do you love carrot cake flavour as much as me? πŸ˜πŸ™Œ
These are great for snacks or for a healthy dessert when you need something sweet and satisfying. Weetbix give them a great taste and some extra moisture πŸ‘Œ

Carrot Cake Protein Balls
(Makes 15-20)

1 large carrot grated
1/2 cup organic rolled oats (blended to flour)
2 Weetbix (or more oat flour)
1 Tbsp organic chia seeds
1/2 cup vanilla plant protein powder @pranaon
5 dates chopped
1 & 1/2 Tbsp coconut oil
1/3 cup desiccated coconut
1/4 tsp vanilla bean powder
1 tsp maple syrup (to taste)
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp nutmeg
Pinch of salt
Blend dates, coconut, weetbix and spices until a fine meal.
Add remaining ingredients except oats and blend again
Add to a bowl and mix the ingredients with your hands
Add oats a little at a time to the mix and squeeze through to desired consistency
*add a little water if too dry and more oat flour if too wet
Taste for sweetness and adjust if required
Using a teaspoon, scoop and roll into balls
Place in the fridge until set
Store in a sealed container in the fridge
