Caramelized Onion White Bean/Hummus Dip:

It’s a beautiful day here and I’m relaxing and taking in the last few days of summer. Although it already feels like fall here, we still have 3 more days until it’s officially time for fall activities. This fall season, I’m looking forward to some fun times….picking apples, enjoying pumpkin desserts, sipping on hot apple cider, carving pumpkins and watching the leaves change….just to name a few things. What will you be looking forward to this coming season?

With all of these activities, it’s important to have easy meals that can be thrown together. This hummus is perfect with a few simple veggies or spread over a piece of toast topped with whatever fresh veg your heart desires.

Ingredients:
• 2 cans chickpeas or white navy beans
• 3 medium cooking onions
• 2 cloves garlic
• 2 tbsp balsamic reduction (half for pan and half for blender)
• splash of lemon juice
• salt and pepper to taste
• slice onions thin and caramelize in pan until golden brown. I use veggie broth instead of oil to stop onions from sticking to pan. Once onions are almost finished add 1 tbsp of your balsamic reduction to the fry pan and mix in well. Once finished put caramelized onions in blender with remaining ingredients and blend until smooth. Enjoy!
