Banana Pudding: GLUTEN FREE, DAIRY FREE & REFINED SUGAR FREE!

This banana pudding is super easy to make, and it’s a dessert you don’t have to feel guilty about at all since it contains no artificial colorings, refined sugars, dairy, or gluten, like regular banana puddings do. AND it’s SUPER yummy. ?? ?

INGREDIENTS:⁣

*13.5 oz full-fat organic coconut milk (I like @nativeforestbrand or @traderjoes)
*1 ½ C vanilla unsweetened or slightly sweetened organic almond milk (I like homemade or @malkorganics)
*1 organic banana mashed
*6-8 tablespoons of organic arrowroot powder (I like @thrivemarket)
*3 tablespoons of organic maple syrup
*2 teaspoons of organic vanilla extract
*1/8 teaspoon of organic turmeric (for color)
*gluten free, dairy free & refined sugar free cookies (like @hukitchen cookies or @simplemills Sweet Thins, pictured here)
*1 sliced organic banana for layering

DIRECTIONS:⁣

1. Whisk together all ingredients in a medium sauce pan except for the cookies, extra banana slices and hold 2-4 tablespoons of the arrowroot powder.
2. Heat on medium high, and whisk continuously, slowly adding the remaining arrowroot powder (add 2 TBSPs first and if you need more thickness, add the other 2), for about 5 or so minutes, until the pudding begins to thicken. Remove from heat and set aside.
3. Start layering the pudding in mason jars: add a few teaspoons of the pudding, then layer on the cookies and banana slices, then top with more teaspoons of pudding and repeat this layering process until you fill the jar almost to the top.
4. Refrigerate the filled mason jars for at least 2 hours for best results.

***Please note I put down organic ingredients, as that is my preference and my recommendation, but you can use conventional versions of these ingredients as well.*** ?
