Seitan ‘Turkey’ loaf recipe for sandwiches! ? ? ?

❤︎ 1 pkg super firm tofu (I use Nasoya)
(Note: Extra firm is fine but remove as much water as possible. Reduce broth to 1/2 cup and add more by the Tablespoon as needed.)
❤︎ 1 cup vital wheat gluten
❤︎ 3 – 4 T nutritional yeast
❤︎ 2 T canola oil (or sub your preference)
❤︎ 2 T Corn starch
❤︎ 1 t onion powder
❤︎ 1 t garlic powder
❤︎ 2 t poultry seasoning
❤︎ 3/4 t dried sage
❤︎ 3/4 t dried rosemary
❤︎ Fresh ground pepper
❤︎ 1 t liquid smoke
❤︎ 3/4 cup broth (veg or chicken-less chicken)
❤︎ 1 T Better Than Bouillon (veg or chicken-less chicken) Sub: marmite, vegemite, or soy sauce

❤︎ Poultry Seasoning

⁠➤ A food processor will do most of the work: Add crumbled tofu and pulse a few times. Add dry ingredients/pulse again. Add liquids/let the processor bring it together into a soft, but firm dough.
⁠➤ Preheat oven to 350℉/175℃
⁠➤ Rip a sheet of aluminum foil about 12-16 inches: you will be encasing the loaf tootsie roll style. (I use parchment paper first, but this is optional)
⁠➤ Remove the dough and begin stretching the gluten out. Knead for a minute or two, set aside for 15 minutes to rest, and then knead another minute or two to form the dough into a loaf
⁠➤ Rub the loaf in olive oil then sprinkle with the poultry seasoning and finish off with paprika
⁠➤ Optional: Tightly roll parchment paper around the loaf and tie the ends with kitchen twine. (I do this because I’ve had aluminum foil burst in the cooking stage but it is not essential)
⁠➤ Tightly roll the loaf in the aluminum foil and twist the ends tootsie roll style.
⁠➤ Place on a baking sheet on the center rack and bake for 35 minutes, turning the loaf every 15 minutes or so.
⁠➤ Remove the foil and bake another 35 minutes. (I leave the parchment on but then remove for the last 10 – 15 minutes)
⁠➤ Let the loaf cool, wrap it up tight, and refrigerate until cold. I find it best to leave it overnight for optimal flavor.
