?VEGAN SOYRIZO TACOS WITH MANGO GUACAMOLE?

ingredients:
FOR “CHORIZO –
2 tablespoons olive oil
1 small onion, chopped
1 tablespoon garlic, chopped
salt and ground black pepper
2 blocks firm tofu
1 tablespoon chili powder
1 teaspoon cumin
⅛ teaspoon cinnamon
1 teaspoon cayenne pepper
1 teaspoon cider vinegar
FOR MANGO GUACAMOLE –
2 ripe avocados
1 small diced red onion
half of a mango diced
3 cloves fresh garlic
salt and black pepper
1 lime squeezed
corn tortillas
chopped fresh cilantro for garnish

instructions:
1) press tofu for 20-30 minutes (i put it on a plate with paper towels under it and on top and place a cast iron skillet on top)
2) put oil on a large skillet over medium-high heat. add onion & garlic, sprinkle with salt and pepper. cook. stirring occasionally, until vegetables soften. 3-5 minutes.
3) crumble tofu into pan with your hands. cook, stirring and scraping the bottom of the skillet occasionally & adjusting heat if necessary until tofu browns and crisps, around 15-30 minutes depending on preference.
4) as it continues to cook, prepare the guacamole by mixing together all ingredients. be sure to continue mixing the chorizo as you do this.
5) sprinkle in remaining spices, stir and cook continuing to scrape brown bits from bottom. stir in vinegar and adjust seasoning to taste.
6) heat up corn tortillas on a pan over high heat then plate with the guacamole, chorizo, and fresh cilantro

NON-VEGAN REPLACEMENT: this would be good with chicken, steak, or real chorizo to replace the soy chorizo!
