VEGAN KATSU CURRY 🌱⠀

Wow this is so good and I love knowing it’s all made from fresh and vegetables😍 I can highly recommend making this katsu curry it’s to die for🤤 see the recipe below!⠀

INGREDIENTS:⠀

•1 tbsp vegetable oil ⠀
•2 onions, chopped⠀
•2 large carrots, chopped⠀
•2 garlic cloves, crushed⠀
•Thumb size piece of ginger, peeled and chopped ⠀
•1 tbsp curry powder ⠀
•1/2 tsp ground turmeric ⠀
•1 can coconut milk⠀
•1tbsp maple syrup⠀
•100ml water ⠀
•Vegan chicken nuggets ⠀
•Jasmine rice ⠀

CURRY SAUCE METHOD:⠀

1️⃣ heat the oil in the pan and cook the onions, carrots until soft⠀
2️⃣ add the garlic and ginger and cook for 1 minute ⠀
3️⃣ then add the curry powder and turmeric⠀
4️⃣ once the spices are warmed through add the tin of coconut milk, maple syrup and water then cover and simmer for 20 minutes⠀
5️⃣ when the onions and carrots are soft, blitz in a good processor or blender. If the sauce is too thick, add a little more water. Check the seasoning and add more maple syrup depending on taste preference⠀

Add to a bowl with rice and vegan nuggets and enjoy😋
