🍗Vegan Hainanese Chicken Chop🍴

Hainanese chicken chop is a bread-crumbed, fried de-boned chicken thigh with thick brown sauce that cooked with green peas and served with potato wedges or fries🍟. I have replaced the chicken with King Oyster Mushroom for vegan/vegetarian version! 🍄
To prepare the vegan “chicken”⤵️
4 large King Oyster Mushroom
1 teaspoon of black pepper
1 tablespoon of soy sauce
Pinch of cumin powder
Pinch of cayenne pepper.
For the preparation of batter:
100 gram of plain flours
150 ml of water
For the breading:
250g of plain flour
2 teaspoon of baking powder
1/4 teaspoon of baking soda
Pinch of salt
50ml of water
Lastly, prepare the flour mixture below:
150g of plain flour
2 teaspoon of corn starch
Step 1: Preheat the oil to 180 Celcius (just enough to cover the coated “chicken”)
Step 2: Coat the “Chicken” with the flour mixture
Step 3: Dip it into the batter.
Step 4: Coat with breading flour
Step 5: Fry for about 4 minutes and flip them once.
Step 6: Transfer it to an oil draining rack or onto a kitchen paper to remove the excess oil.
Step 7: Your Vegan Fried Chicken is ready to be served!
For the sauce⤵️
(A) Frozen green peas, tomatoes (diced), sweetcorn, red & green bell peppers (you can replace with carrots).
(B) Tomato ketchup, vegetarian oyster sauce (mushroom extract), 1 tsp of brown sugar, dash of white pepper, 1/2 cup of water or stock, and salt to taste. Mix all the ingredients in a bowl and set aside.
Cook (A) with (B) until vegetables are cook through. Stir in cornstarch solution to thicken the sauce. Voilà!
