I have a NEW healthy recipe for you guys! I’ve experimented with it a few times now and I’ve finally nailed it. It’s super easy and I think you’re going to LOVE it! This meal is vegetarian but feel free to swap in the tofu for chicken, prawns etc whatever takes your fancy. Serves 4
Curry paste:
2 lemon grass stalks
5 garlic cloves
4cm fresh ginger
1 large red chilli
1 tbsp sriracha sauce
1 tbsp ground coriander
1/2 tsp turmeric
1/2 tsp cumin
1 tbsp olive oil (1 tsp for frying)
400g tofu (cut into cubes)
2 peppers
3 onions
150g peas
1 can 400ml coconut milk
3 tbsp soy
1 tbsp honey (can use coconut sugar if vegan)
2 cups beansprouts
1 lite vegetable stock (can use chicken)
200g whole wheat noodles
1 chilli
4 spring onions
2 handfuls fresh coriander
1. Add paste ingredients to pestle and mortar and pound until smooth (or use a food processor) and fry in a large saucepan for 2 mins in the oil.
2. Add the onions and peppers and cook on a medium heat until soft and after 2 mins add the peas.
3. Add the stock, soy sauce and honey and simmer for 2 mins.
4. Add tofu and coconut milk and simmer for a further 5 mins.
5. Meanwhile cook the noodles for the required time it states on the packet.
6. Finally serve the laksa on top of the the noodles and raw beansprouts and add the chilli, spring onions and coriander as toppings, enjoy!?
