💚Thai Green Curry Tofu Bowl🍛
Fragrant, spicy and creamy vegan thai green curry with tofu and vegetables for the rainy day.
What you need🛒:
For the Green Curry Paste, it can be store-bought or you can make it yourself. Ingredients are green Thai chilies, galangal, lemongrass, Thai basil, cilantro roots, cilantro stems, kaffir lime zest, white peppercorns, cumin seeds, coriander seeds and salt, by using Ninja IntelliSense System.
Green bell pepper deseeded and cut into thick slices, babycorn halved lengthways, oyster mushrooms and a handful of fresh basil.
1 box firm tofu, cubed and air-fried.
By using Ninja Foodi OP300 aircrisp at 200°c for 15 minutes, brush with oil, flip over the tofu in between. Then set aside.
Sauté 3 slices galangal, 6 kaffir lime leaves, 1 lemongrass and red chili pepper/Thai green chilies with 2 tbsp coconut oil in Ninja foodi by selecting SAUTÉ mode and HI, add 3-4 tbsp green curry paste and continue sauté. Add all the vegetables, 100ml coconut cream, 1 and a half cups of water, 2 tsp coconut sugar and salt to taste. Bring to a gentle simmer until the veggies are tender. Transfer into a bowl, add tofu, garnish with cilantro, lime wedges and serve with rice. Voilà!
🔸You can sub the tofu for seitan, chicken style pieces or tempeh. Sub veggies for anything you have on hand or prefer!
🔸The paste can be made ahead of time and frozen in an air tight container.
