sweet & spicy noodle bowl 🤝
this is so good! i modified a sauce recipe i found online and added my own ingredients that i had as leftovers/needed to use in my fridge. it turned out perfect & made 2 servings 🙂
1/4 cup gochujang
3 tbsp hoisin sauce
2 tbsp olive oil
juice 1/2 lime
2 tbsp toasted sesame oil
1tsp red chili paste
1 minced garlic clove
2 blocks of rice ramen (or just cook your noodles of choice)
1 cup green beans, chopped into small chunks
1/2 chopped shallot
1 chopped scallion
mix your sauce ingredients together. cook your noodles. in a wok, heat some olive oil over medium high heat. add in the green beans and stir to coat with oil. add a spoonful of water and let it cook off to cook the beans (they’re small so it’s fast). add in chopped shallot and white part of scallion. add in cooked noodles and pour over the sauce.
i had leftover chicken drumsticks from gochujang chicken i made 2 nights ago, so i shredded the chicken and added that in.
top w/ sesame seeds and green onion.
voila! a little sweet, mostly spicy, and the complexity in flavor of the gochujang (a fermented korean chili paste) makes this taste really layered without a lot of work. takes like 10-15 min to prep.
