Southwestern Sweet Potato
Quinoa Salad with
Avocado Lime Dressing

All your Mexican flavors in a healthy, hearty vegan salad!

1-2 sweet potatoes, diced and roasted
1 cup black beans, rinsed
1 cup Quinoa, cooked
1/2- 1 head Romaine lettuce, chopped
1/2 red onion, diced
Pepitas ( pumpkin seeds), toasted

Avocado Lime Dressing:
1 small avocado
2 T vegan mayo( Sir Kensington’s)
1 lime juiced ( more if needed)
2 garlic gloves
1 tsp cumin
1/4 tsp salt
1/4 tsp pepper
1/2 jalepeno, sliced
1/3 cup water
Add all above to small food processor.
Blend until smooth.
Adjust flavors and consistency with more lime, water etc.

Toss diced sweet potatoes with olive oil, 1 tsp cumin & garlic powder, 1/4 salt & pepper
Roast at 350 for 20 min.

Make quinoa and dressing while sweet potatoes cook.
Add pepitas to a dry skillet stir and cook until toasted, about 8 min.

Layer chopped lettuce,
Quinoa, Sweet potatoes, black beans and red onion.
Sprinkle with pepitas and toss with dressing.

You can easily add chicken or shrimp to this salad.

I’m seriously thinking of making it again tomorrow!
So yummy!
