Savory Chow Mein Stir Fry with Seared Tofu, Bok Choy and Carrots

4 tbsp olive oil, separated
1 bunch Bok Choy, chopped
1 large Onion, chopped
2 carrots, chopped thin into matchsticks
2 bundles, or 3 cups chow mean
3 Tbsp Sesame Oil
1/2 cup soy sauce
1 tsp @betterthanbouillon chickenless bouillon
1/3 cup water
3 Tbsp cornstarch
1 package, tofu, cut into strips
3 Tbsp sesame seeds

1.) Add 2 tbsp olive oil to skillet. Add onions and cook until translucent. Add carrots. Cook 2-3 minutes. Mix water and bouillon together and add to skillet. Add bok choy, stir and lower heat to medium low.

2.) In a boiling pot of water, cook chow mein for 6 minutes or until al dente. Drain and add skillet.

3.) Dredge tofu strips in cornstarch until well coated. In a pan, add remaining 2 tbsp olive oil. Add tofu and sear on both sides until lightly browned.

4.) Add tofu and soy sauce to skillet. Simmer and stir 2-3 minutes. Top with sesame seeds and serve.

Add more soy sauce to taste, if needed.
