My mum loves to cook this vegan meal for me when I visit! This is actually the slimming world salt and chilli chicken recipe but my mum veganised it for me ?❤️ I had it with straight to Wok noodles and mayflower curry sauce ??!

‼️Recipe coming at ya (serves 2)‼️
Ingredients:
? 300g tofu (cut into cubes)
? 100ml soy milk (in a bowl to coat tofu)
? 200g of SMASH (instant mash potato)
? 1tsp ground sea salt
? 1tsp chilli powder
? 1tsp garlic powder
? 1tsp onion powder
? 1 green bell pepper (diced)
? 2 small onions (diced)
? 1 red chilli (deseeded and chopped)
? 2 garlic cloves (crushed)
? 1 tbsp soy sauce
? Mayflower curry sauce (made to packet instructions)
? 2 x150g pack straight to Wok noodles

Method:
1. Mix the Smash with the salt, chilli powder, onion powder and garlic powder in a bowl.
2. Dip the cubes of tofu one at a time into the soya milk then into the smash mix and set aside.
3. Put a little oil in a pan and fry all sides of the tofu cubes until golden brown.
4. When the final side of the tofu is browning, use fry light spray in another pan to fry off the pepper, onions, chilli and garlic. Don’t let them go too soft, keep the veg a little crunchy.
5. Prepare the curry sauce.
6. Add the soy sauce to the veg (sometimes my mum puts in some sweet chilli sauce now too) then add the tofu and toss together for a couple minutes.
7. Remove the tofu from the pan and set aside, then add the noodles to the veg for 2 minutes.
8. Plate up noodles first, place the tofu on the top and finish with curry sauce!
