Soto is one of my favourite soups, very refreshing, light and delicious. The most famous one is chicken soto or chicken yellow soup, but let’s make it with lots of beautiful veggies without making the taste less.

INGREDIENTS :
.
TO BLEND :
.
3 – 5 cm Turmeric
3 cm Ginger
3 big Australian shallots
A whole clove Garlic ?
5 Candlenuts, toasted
1 tsp Coriander seeds
4 tbsp Cooking oil as your preference

Note : you can save half of the paste for next time.

OTHER INGREDIENTS (for soup) :
.
1500 ml (about) Water
3 cm Galangal, crushed
2 – 3 stalks Lemongrass, crushed
5 sheets Kafir lime leaves
2 tbsp Veggie stock powder
To taste Salt
To taste Pepper
.
FOR TOPPING :
.
Vermicelli rice, soak.
A handful Cabbage, thinly sliced
Celery, chopped
2 – 3 Limes
1 tbsp Fried onions (optional)

DIRECTIONS :
.
1. Put all the paste ingredients in a food processor or blender, blend them until soft.
2. In a cooking bowl, heat two spoons of cooking oil as your preference then stir in half of the paste, add galangal, kafir lime leaves and lemongrass then add water a bit by bit. Cook the soup until boiling.
3. Prepare the toppings and arrange in your bowl.
