Ramen night. Served up with some homemade kimchi to spice the dish up. ? love this recipe inspired by @choosingchia – not many ingredients (and unlike most vegan dishes not a lot of vegetable chopping) but really good flavor.

Cook some minced garlic, chopped green onions & grated ginger in some oil for couple mins. Add dried shiitake mushrooms & continue cooking. I had 5-6 cups of veggie broth so added that with couple cups of water, some soy sauce and little squeeze of agave nectar (honey or maple syrup work). Cook covered on low simmer for 10 then add diced tofu (shrimp would be bomb too or chicken), ramen noodles & spinach. When the noodles are cooked you ready. We love to add kimchi and some roasted seaweed sheets (seaweed??? promise it’s good).
