⭐️ Paprika Traybake ? The perfect meal for a hot summers day. My kids love tofu so I’m always trying to use it in different ways so I used it as the main ingredient in this tray bake. This meal was so quick and easy that it makes the perfect summer night dinner. The kids loved this and enjoyed making up their own pittas filled with tofu, veggies, salad and mint yoghurt ? You can use chicken, halloumi or paneer instead of tofu.

For this I used –
1 block extra firm tofu
1/2 red pepper, chopped
1/2 yellow pepper, chopped
1/2 courgette, chopped
1/2 aubergine, chopped
1 tsp paprika
1 tsp smoked paprika
1 tsp mixed herbs
1 tsp oregano
Juice of 1 lemon
Salt and black pepper to taste
1-2 tbsp Olive oil
*You can add more paprika and cayenne chilli pepper for spice

Preheat the oven to 180°C and line a baking tray with a silicon mat or parchment paper. Remove the tofu from the packaging and put on kitchen towel and remove any excess liquid. Cut the tofu into medium sized cubes. Cut the peppers, courgette and aubergine into a similar size to the tofu. Put the tofu and veggies along with the other ingredients into the baking tray and mix well. Pop into the oven and roast for 25-30 minutes. Serve with pitta bread, salad and dip ?

What a day, it’s been so hot here I’m not sure how we’re all coping ? Do you enjoy being outside on hot, sunny days or prefer to stay out of the sun? I enjoy this weather and love being outside for as much as I can but know it’s good to have some time out of the sun, especially for the kids!
