Onigirazu aka “Sushi sandwich”

– @gimmegrams organic sushi nori
-nishiki sushi rice, cooked according to package directions
-romaine lettuce, cut in squares
-2 carrots, peeled
-1 hothouse cucumber, sliced on the diagonal
-Black sesame seeds
– @gardein seven grain crispy tenders, cooked according to package directions
-Optional: corn, spicy mayo

Eel sauce:
*¼ cup Liquid Aminos
* ¼ cup sugar
* ¼ cup mirin
* 2 tablespoon water
* 1 tablespoon cornstarch
* ½ teaspoon toasted sesame oil
* 1 teaspoon soy sauce
* Heat on medium until it boils, then turn to low and continue to stir for 5 minutes. Remove from heat and cool

Assembly Directions:
1. Place seaweed down on a clean surface in a diamond shape
2. Place a square layer of rice on top of the diamond shape
3. Place other layers: chicken, cucumber, carrots, lettuce avocado
4. Fold in top and bottom of seaweed
5. Fold two diamond sides of seaweed
6. Wrap in Saran Wrap. The heat of the rice will melt the seaweed
7. After 5 minutes, cut in half and serve with eel sauce
