Ok this is my “feel better” soup. Ingredients I always have on hand, and the cheapest most nutritious thing I can make quickly! And, sharing is caring, or so I’m told.
My take on my favourite item from my favourite Nepali restaurant #taseofnepal
Yellow Dahl Soup.
4 servings – ready in 20mins.
4-5 cloves fresh local garlic
2 cups red split lentils
8 cups bullion (I use chicken🤐)
1 tbsp yellow curry powder
1 tsp tumeric
1 tsp cayenne
Salt/pepper to taste
Coconut oil (or your fav oil)
Oil up your pot
Add spices & sautée for 2-3 mins
Bring to boil then turn to medium.
Lid off, stir occasionally for 15 mins
Add the juice of two lemons, salt, pepper, serve.
Tada! P.s my kids loved this soup as babies and it has the iron and fiber they need.
