[New Recipe] Vegan Pipa Tofu with HK lemon sauce

There are thousands (if not millions) ways of cooking tofu in Asia. Yet you can only taste Pipa Tofu (#琵琶豆腐) in Guangdong and Hong Kong ??

This tofu is shaped into Pipa, a Chinese string musical instrument ?As artistic as its name, Pipa Tofu is crispy on the outside, tender juicy and flavourful with your own choice of ingredients (from seafood to all sorts of veggies?) inside!

Pipa tofu is usually served with starchy soy sauce. Since I miss HK #daipaidong so much, I’ve used HK lemon sauce instead. It’s a sauce that goes with a must-order dish, lemon chicken #西檸雞, in dai pai dong!
? Ingredients
1 block firm tofu
2 pieces shiitake mushroom, soaked and chopped
15-20g carrots, chopped
15-20g peas
1 tsp flour
Seasoning — 1.5 tsp salt, 1 tsp sesame oil, 1/2 tsp pepper, 1 pinch sugar
? HK lemon sauce — 1 lemon, 3-4 tbsp maltose syrup (vegan) / honey (vegetarian), 1 tsp salt, 1/2 tsp cornstarch
1️⃣ Squeeze out excess water of 1/2 block tofu with a paper towel. Add in another half and mash all the tofu with a spoon.
2️⃣ Stir in the cornstarch, all other ingredients and seasonings. Mix well and process it into a paste consistency.
3️⃣ Brush a spoon with a little oil. Scoop the tofu paste with the spoon and use another spoon to help shape it into a pipa
4️⃣ Gently slide the paste off the spoon. Coat the pipa tofu evenly with a thin layer of cornstarch.
5️⃣ Heat the oil and deep fry the tofu until golden yellow with medium heat. Take the tofu out. Heat the oil with high heat and fry tofu again for 1 min for crispier skin.
5️⃣ Make the sauce: cut 4 thin pieces of lemon and squeeze the remaining into juice. Boil the lemon, lemon juice, maltose/honey and salt with medium heat for 2-3 mins. Stir constantly. Mix the cornstarch with 1/2 tsp water and add into the sauce. Stir well.
6️⃣ Pour the sauce onto the tofu, serve hot!
