Lentil Sloppy Joes was our delicious vegetarian dinner tonight. I served it with coconut lime rice and salad greens. Making the switch to eating mostly vegetarian has been a learning experience. I am really enjoying taking my old chicken and meat recipes and then turning them into vegetarian meals.

Recipe
3 cups cooked lentils
1 medium onion, chopped
1 red pepper, diced
1 cup mushrooms, sliced
6 ounces tomato paste
1 can (15 ounce) can diced tomatoes
4 Tbsp barbecue sauce
1 teaspoon maple syrup
2 tsp chili powder
2 Tbsp brown sugar
2 tsp mustard
salt to taste

In a frying pan over medium heat, cook the onions, pepper, and mushrooms until soft and slightly browned. Add all the ingredients and thoroughly mix. Reduce the heat to simmer for 10 minutes. Taste and tweak to your liking.
