I became a vegetarian almost two years ago. I would never tell anyone what to eat and I think everyone has their own journey with food – eat what suits you and your body. However even though I’ve always loved cooking, embarking on a vegetarian journey was completely new to me. I don’t like boring food, so I started reading recipe books, cooking new things, trying things I’ve never tried before. I can’t believe how much I have opened my mind to different foods since almost two years ago. Right now I am loving taking non-vegan foods and making them vegan. A lot of people are often thinking you are depriving yourself from good food when you are vegan but it is actually unbelievable how many “normal” meals you can have by just substituting some ingredients. This vegetable wholegrain rice with coconut coated tofu and vegan yoghurt dip was actually adjusted from a chicken recipe to make it vegan and it was delicious.
