Hokkaido (where I live now) local food Soup Curry 🍲 

Soup Curry is a light curry flavored soup served with chicken (of course NOT!! we are vegan ❌🐓) and colorful vegetables that are flash fried to give the vibrant colors.

Super easy, only 15 minutes cooking, and so delicious and comforting 😋

🌿Soup curry (serving 2)
✔️Make curry soup
1 in a small sauce pan, boil 1.5cup water, add 1tsp grated ginger, 1tsp veggie stick, 1.5tsp ketchup, 1.5tsp curry powder, 1tsp vegan oyster sauce, 1tsp cane sugar, pinch salt, basil powder, and Garam masala 

🌿Ingredients for soup
✔️Pan fried tofu
Cut atsuage tofu or extra firm tofu into cubes, coat with salt , pepper, nutritional yeast, and rice flour, then pan fry 
✔️Steamed broccoli 
✔️flash fried or air fried veggies.
Whatever’s you have in a fridge are good, I used eggplant, lotus root, pumpkin. Potatoes and carrots are also good!!

In a bowl, place all the ingredients, and pour piping hot soup
