Hit the kitchen on the last night of summer and made a fall fave: Roasted butternut squash soup. Some special ingredients in this batch and an awesome Hawayje spice blend from @la_boite in NYC (order online…Lior is a master). Took out the power immersion blender from @breville and voila! Recipe below so you can whip up your own batch. ??
3-4 pounds butternut squash, diced
2-3 parsnips diced
3 Ginger Gold apples, peeled, cored and diced
1 medium red onion, diced
2 tbsps olive oil
3 tbsps Hawayej
Salt and pepper to taste
4-5 cups veggie or chicken broth or stock
3 sprigs fresh thyme
Preheat oven to 400
Put all chopped veggies in a mixing bowl, coat with olive oil and spices, place on heavy foil on sheet pan.
Roast 25-30 under soft
Cool for 15 mins
Transfer into soup pot or blender and add broth/stock and fresh thyme
Begin blending and check for spice level. Add more as needed.
Complete blending until smooth. May need to reheat before serving.
