HEARTY CABBAGE BAKE It’s been a while since I posted something food related, I guess it just felt so irrelevant and insensitive in a way with everything else going on, but, we all have to eat, and this meal (that might have been inspired by something I saw from @confinedfoods ) is easy, hearty, veggie filled and super cheap! This is also likely to be my last food related post for a while as tomorrow it is back to ER and Covid wards for me and from there it will be all systems go.

But back to our side dish! Cabbage is such an awkward veggie and I never know what to do with it. Well, from now I do!

Ingredients:
•One big cabbage, or a few small ones, cut up in wedges
•Two mealies, pips sliced off
•One tin coconut milk, combined with a tablespoon of mustard
•Parmesan cheese to coat
•Chilli flakes, salt and pepper
•Spring onion or parsley to garnish

You literally cover the cabbage and mealies in the coconut milk mustard mixture. Coat with parmesan cheese. Bake at 200 for 20-30 min (until brownish) and serve.

Delicious with fish, chicken, even a wonderful winter braai side dish. ?
