one of those days i want a quick meal πŸŒΏπŸ’πŸ»β€β™€οΈ just threw together some rotini with pesto, veggies and sausage. it’s a simple and quick meal i have at least once a week!

ingredients: makes 4 servings
8 oz rotini pasta
2 tsp olive oil
3-4 cloves garlic, minced
4 chicken sausages, chopped
2 cups broccolini and caulini
1/2 cup halved grape tomatoes
1/2 cup vegan hemp seed pesto (on my blog)

directions:
1. prepare pasta according to package instructions. drain and rinse with cold water. leave in pot.
2. preheat a large skillet to medium heat with olive oil and garlic. allow garlic to brown, about 1 minute, mixing around with a spatula. add in chicken sausages, broccolini, caulini and cook for 3-4 minutes until softened and slightly browned.
3. transfer to pasta pot and toss with pesto!
