Creamy Mac No Cheese, Mushroom ‘Bacon’ and Broccoli by @the.tinykitchen 🧡

1/2 butternut squash, roasted
1/2 head of cauliflower, roasted
2 garlic cloves
1 tsp vegan “chicken”-style stock/vegetable stock
1 tsp onion powder
1 tsp garlic salt
1 cup cashews, soaked
2 tbsp nutritional yeast
1 cup unsweetened oat milk
Blend everything in a blender and add salt and pepper to taste! Add more nutritional yeast for a cheesier taste. Mix sauce in with your favourite pasta.
OPTIONAL: mushrooms: marinate 2 large king oyster mushrooms in 2 tbs soy sauce, 1 tbs olive oil, 1 tbs nutritional yeast, 1 tbs maple syrup, 1/2 tsp liquid smoke and pepper. Pan fry until browned. Serve with steamed or pan-fried broccoli and enjoy!
