Garbanzo Bean Quinoa Salad 🥗

A perfect main or side dish that goes great with falafel, grilled chicken or fish. It’s so refreshing and easy to make! 😊

Ingredients:

2 bunches parsley chopped (curly/italian)
3 medium tomatoes diced
1 cup cooked chilled quinoa
1 can garbanzo beans (drained & rinsed)
4 green onions chopped
1 cucumber diced (take seeds out)
2-3 lemons (adjust to your preference in acidity)
1-2 tbsp salt (taste as you go for your preference)
2 tbsp olive oil
1 tbsp garlic powder

Steps:

•Add all ingredients into a bowl except for quinoa and mix. Salt & Garlic powder to taste and squeeze lemon juice

•Once all ingredients are mixed add quinoa and adjust your seasoning if you need to

•Serve as a salad topper, side dish, a quick lunch, in a burrito wrap w/ hummus, add feta or Kalamata olives if you’d like. This salad is very customizable! Enjoy 🤗

•Stays good in the fridge up to 3-4 days
