Easy Vegan Satay Chicken skewers with Broccolini & Rice 🍢🥦🍙🤗 SAVE to come back to this healthy and yum recipe!
1 packet of @morrisons vegan chicken pieces (or any other similar product, tofu will work well also!)
2 cloves of garlic (minced)
1 yellow pepper (chopped into large chunks)
2 portions of broccolini
1tsp toasted sesame oil
1 cup of basmati rice
Spring onion, chilli flakes and chopped peanuts for garnishing
4 tbsp smooth peanut butter
2 tbsp hot water
1 tbsp soy sauce
1/2 tsp garlic powder
1 tsp chilli flakes
Start by cooking your rice to instructions.
While the rice is cooking, cook the chicken/tofu pieces in the minced garlic in a little oil until golden brown. Once fully cooked, put the veg and chicken pieces on skewers in a large roasting pan. Mix the broccolini with a little toasted sesame oil and add to the skewers. Grill for 15 minutes, flipping the skewers and broccolini half way through. Meanwhile, make the sauce by adding the hot water to peanut butter and mixing well. Then just add in the soy sauce and seasonings and stir.
Serve the skewers over sesame broccolini and rice and pour the satay sauce over all of it. Then sprinkle some chilli flakes, chopped peanuts and lots of spring onion on top of it all.
This was our recent favourite and I can’t wait to make it again! This time I will use tofu and whatever veg we have left over!
