Easy Vegan Mango “Chicken” Curry 🥭 🌱
You will want to be sure to try this vegan version of the incredibly delicious Indian curry recipe 🍛 It has an amazingly smooth texture and is packed with plenty of flavour to satisfy your spicy, sweet and savoury taste buds. Best part – it is so easy to make and ready in 30 minutes! ⏰
▪️1 large red onion, peeled and chopped
▪️4 cloves of garlic, minced
▪️2 slices of ginger, minced
▪️1 can of low-fat coconut milk
▪️2 large ripe mangoes, cubed
▪️200 grams of vegan chicken pieces
▪️2 tablespoons of cumin
▪️2 tablespoons of curry powder
▪️2 tablespoons of chilli powder
▪️ tablespoon of tumeric
▪️1 teaspoon of mustard seeds
▪️1 teaspoon of extra virgin olive oil
▪️Coriander as garnish
▪️Add chopped onions, minced garlic and minced ginger with 1 teaspoon of extra virgin olive oil in a large pot on high heat (for an electric stove, we use a setting of 7 out of 9). Sautee for 3 minutes.
▪️At the same time, place your vegan chicken pieces into the oven for the recommended time at the recommended temperature (we use frozen pieces which take around 15 minutes).
▪️Once the onions, garlic and ginger are soft and slightly golden, add one tablespoon of cumin, curry powder and chilli powder, half a tablespoon of tumeric and mustard seeds and mix well.
▪️Then add coconut milk and one large mango pieces to the pot and bring to boil. Add the remaining tablespoon of cumin, curry powder and chilli powder and half tablespoon of tumeric to the mix and stir well.
▪️Turn off heat and add the contents of the pot into a blender and mix for one minute. The contents should be smooth and velvety.
▪️Pour the mixture back into the pan and add the other large mango and cooked van chicken pieces to the mix.
▪️Once cooked, serve in a bowl with your preferred side and garnish with coriander
