easy vegan lunches multip img cacb


So these are all lunches I’ve had over the last week or so and they’re my absolute go to meals which are also perf for packed lunches to take to work!! ๐Ÿ’ž๐Ÿ’ž

1 – focaccia with falafel kofta, hummus, sriracha mayo, lettuce, tomato, cucumber ๐Ÿฅ’

2 – hear me oot on this but crumpet salads are the one ๐Ÿคค (roast them cut up with garlic and smoked paprika for about 15/20 mins and they’re just the perf added texture/crunch to a salad!!) ps nandos sauce is a gaame changer for a salad ๐Ÿฅต

3 – yet again falafel and hummus but this time on a bagel!! There’s a theme here but honestly I looove falafel ๐Ÿ˜‹

4 – pasta salad to mix it up a bittt ๐Ÿ˜š with a tahini and lemon dressing ๐Ÿฅบ๐Ÿฅบ

5 – she a popular one!!! Falafel again but on bread this time ๐Ÿ˜˜

6 – another salad ๐Ÿฅ— if I don’t have crumpets/falafel it’s either quorn ham or sainsburys chicken pieces

7 – my other faveeee butty filling is quorn chicken or ham with cheese ๐Ÿง€ you can’t go wrong!

How I plan my lunches: each week I buy pretty much the same ingredients and use different breads/sauces to pair with it to make them all feel like different meals and this works for me! and keeps things cheeeeap ๐ŸŒž๐ŸŒž
