Easy Monday Night Dinner: Teriyaki Chickpeas-Broccoli Stir Fry

Honestly, nobody wants to spend hours on Monday night cooking dinner. Here is a super easy recipe, fast, and nutritious. Can be prepared with foods that you most likely have at home and is very adaptable to your dietary preferences. You can add tofu, chicken, ground turkey, shrimps, steak or salmon strips to it for more protein. Add your favorite veggies, snow peas, red bell pepper, edamame or enjoy as is.

Ingredients:
4 cups broccoli florets
3 cups cooked chickpeas (or 2 cans rinsed)
2-3 tbsp toasted sesame oil
sesame seeds for serving

For teriyaki sauce:
1/4 cup liquid aminos
1 tbsp fresh ginger, grated
3 garlic cloves, minced
2 tbsp balsamic vinegar
1 tbsp fish sauce
1 tbsp maple syrup
1/2 tbsp tapioca flower (or corn starch, arrow root)

Mix all ingredients for teriyaki sauce in a bowl and set aside
Heat sesame oil in pan or wok, add broccoli and cook on high heat stirring frequently, after few minutes add chickpeas, keep stirring until broccoli is tender.
Add teriyaki sauce and sesame seeds, serve with side of rice, quinoa or rice noodles.
