Curry chicken? Me nuh ave dat! ?

• Sauté half a finely diced brown onion, 3 sliced spring onions & a big ol’ piece of grated ginger in 1 tbsp coconut oil for 5 mins.

• Add 6 cloves of grated garlic for a further 2 mins.

• Stick that into a blender until smooth.

• Wipe the pot dry with a piece kitchen paper.

• Cook off 6 tbsps Jamaican curry powder in the dry pan for 40 seconds then add 2 tbsp veg oil n continue for 40 more seconds.

• Add to the pot:
– Back the onions, ginger & garlic.
– Sliced red, green & yellow bell peppers.
– 2 chopped carrots.
– Yam, cubed.
– Half a sliced red onion.
– 1/2 tbsp ground black pepper.
– Nuff stripped thyme leaves.
– Tinned coconut milk (400ml).
– 600ml boiling water.
– 2 meat free chicken flavour OXO cubes.
– 1 or 2 (2) scotch bonnets.

• Simmer on a low heat for 40 mins.

• Cube some @tofoo and pat dry.

• Toss the @tofoo in:
– 1/2 tsp onion powder.
– 1/2 tsp garlic granules.
– 1 tsp Jamaican curry powder.
– 1/2 tbsp all purpose seasoning.
– 1 tbsp chicken seasoning.
– 1 tbsp corn flour.
– 4 tbsps veg oil.

• Bake on 200 for 25 mins.

• Add the cooked tofu to the pot.

• Rice & lentils ?

• Steam veg ???
