Quick and easy week night meal ideas call for this 20 minute satay sauce with salt and pepper chicken. This was so perfect for throwing all our ingredients in a pan and leaving to simmer until ready.⠀

Recipe (serves 2-4)⠀
190g pack salt and pepper chicken⠀
1 onion, diced⠀
2 cloves garlic, crushed⠀
1 pepper, diced ⠀
1 chilli, sliced ⠀
1 carrot, sliced lengthways and then into quarters ⠀
1 tbsp curry powder⠀
400ml tin coconut milk⠀
1 cup vegetable stock⠀
2 tbsp tamari⠀
3 tbsp peanut butter ⠀
1 tsp sugar⠀
Handful of peanuts for topping⠀

In a pan, over medium heat, fry onion and garlic until translucent. Add pepper, chilli, carrot and curry powder and stir until curry powder is combined. Add all other ingredients, apart from the chicken, to the pan and bring to a boil. Reduce heat to a simmer, and leave to cook for 20 minutes until vegetables are softened. Add chicken and cook for a further few minutes. ⠀

Serve topped with peanuts and fresh coriander.⠀
