BUTTERNUT SQUASH “TIKKA MASALA”
Perfect warming recipe for #meatlessmonday and this one’s a good one 🙌🏻 If you love tikka masala, I’m telling you you’ll love this recipe. The butternut squash soaks in all the flavor and has a similar consistency to chicken, but the sauce sells this recipe for sure! Reel coming tomorrow a.m.
– 2lb butternut squash (coat with sea salt, garam masala and olive oil) and bake for 35 minutes on 400 degrees Fahrenheit.
1.5 cups tomatoes
1 can chickpeas
1/4 tsp sesame oil
1/4 tsp ginger
1 tsp paprika
1-2 tbsp EVOO
2 tsp ghee
4 garlic cloves
1 cup water
1 tsp garam masala
1 tsp cinnamon
Dash red pepper
1 tsp sea salt
1. On a baking dish coat squash with garam masala, olive oil and sea salt and cook for 35 minutes on 400.
2. In a food processor add the remaining ingredients and pulse until you have a sauce like consistency. Heat on the stove for 8-10 minutes with cooked squash.
3. Serve with rice and garnish with kale or cilantro
