Been making this shaved Brussels salad on REPEAT lately. You can def make it with all raw vegetables but I’ve been steaming mine because I like the taste better and also find I digest it better.

INGREDIENTS:
?Shaved Brussels Sprouts (you can find these at most grocery stores!)
?Chopped Asparagus
?Chopped Carrots
? Grapes, halved
? Optional protein of choice. Would be great with salmon, chicken, tofu, roasted chickpeas, beans etc.
? Optional fat of choice. Feta or goat cheese and/or avocado would also be great in this.

I steam the asparagus, brussels and carrots all separately & then just mixed them all in a bowl with the grapes. I don’t really like dressing on my salads (I know ??‍♀️) but I’ve been enjoying this one with a squeeze of orange/a splash of fresh orange juice. Random but so good!
