BALSAMIC SHROOMY TOASTS with CREAMY HONEY-GARLIC SPINACH SPREAD. Dairy-free/Gluten-free/Vegan. My feed is getting very brown ? But it’s that time of year ?‍♀️ I’ve been on a huge mushroom kick lately…and my favorite combo had been mushrooms and balsamic. They are super easy and pair with just about anything. Throw some eggs/tofu/steak/chicken on top of these for some extra protein or just enjoy alone! This spread is super tasty and comes together in just five minutes.


Deets: 2 slices gf sourdough, topped with this spread, and mushrooms and scallions. MUSHROOMS: 1 pound of mixed mushrooms, sliced and sautéed over medium high with 1 tablespoon olive oil/butter or ghee for about 4-5 minutes. Add salt and pepper to taste and sauté another minute or two. Add 1 tablespoon balsamic vinegar and toss. Once the liquid has reduced turn off heat. CREAMY GARLIC HONEY SPINACH SPREAD: 1/2 cup dairy free Greek style yogurt (or regular), 2 tablespoon tahini, 2 teaspoon honey, 1/4-1/2 teaspoon salt (to taste), 2 cloves minced garlic, 1.5 teaspoon lemon juice, 1/2 teaspoon apple cider vinegar, 1/4 cup cooked spinach (I quickly sautéed some but could just steam some as well). Mix all ingredients until smooth.
