I’ve been trying to find a foolproof way to make seitan and I think this is it!
It does take some time to make but actually it’s super easy and the result is 100% worth it! ☺️?
Prepare this on the weekend and store it in the fridge that you have it in hand during the week.
You can put it sauces, fry with spices, use on sandwiches…just like you’d prepare chicken.
RECIPE (4 servings each 270cal/36P/19C/2F):
-1 can (220g) chickpeas
-1/3 cup + 1 Tbsp (90ml) water
-2 Tsp poultry seasoning
-1 Tsp salt
-1 Tsp garlic powder
-1 1/2 cup (180g) vital wheat gluten
-4 cups (1L) veg stock (for simmering)
BLEND the chickpeas, water and spices for 2-3mins in a food processor/ADD vital wheat gluten, BLEND for another 2-3mins/KNEAD for 2mins/DIVIDE the dough into 4 strings, twist them and make a knot/FRY each side for 2-3mins, then add veg stock/SIMMER (!) for 50mins/PLACE in the fridge to cool down and tear into strips

This is a 15min recipe and tastes absolutely amazing…perfect for weeknights! ?
Sub the fresh tomatoes for canned chopped tomatoes.
Feel free to add more veggies or a source of protein.
RECIPE (3 servings each 365cal/12P/65C/5F):
-3 cloves garlic
-1/2 Tsp Chili flakes
-1 Tbsp olive oil
-4 fresh tomatoes (or 250g canned)
-2 Tbsp tomato paste
-3 Tbsp balsamic vinegar
-1/2 Tbsp sweetener of your choice
-salt and pepper to taste
-250g pasta (raw weight)
-1/2 cup (125ml) pasta water
-some fresh basil
COOK the pasta ‚al dente’/FRY garlic and Chili flakes in the oil/ADD the tomato paste and balsamic vinegar and FRY for a few more minutes/ADD the remaining ingredients and let it simmer until the pasta is cooked/STIR in pasta, pasta water and basil
